Method of preparation

Choose very ripe nectarines, which easily detach from the stems, and cut into cubes. Put them in a pot, boil, together with lemon juice, stirring constantly, so as not to stick to the bottom of the pan. Let them boil until the composition starts to subside, then add the sugar and let the fruit boil for another 30-40 minutes. Put the warm jam in jars and seal them tightly so that the air does not penetrate at all.


If time allows, you can also try the option of letting the nectarines cut into cubes soaked in sugar for a whole day, before boiling them with lemon juice.
